His first master and culinary inspiration was his dad, who taught him how to live in harmony with nature and the rhythm of the seasons, how to celebrate life – by cooking. This made his sense of taste develop exceptionally well and quickly. Cooking has become a way of life for Simon. He took his first steps in gastronomy as a student filled with dreams of creating flavors that he could share and give people the joy of eating.

In the pursuit of a goal, humility is important. Before you raise your head you need several years of learning and patient observation. I developed my culinary passion further in Silesia as a deputy chef in one of the popular restaurants in Katowice, where I combined diversity with simplicity of form and unconventional composition of flavors. I settled down in Katowice – I was deputy chef in an Italian restaurant, which developed my concept of Mediterranean cuisine, simple but based on delicious products and the joy that is hidden in the sun of ripening vegetables. This is how I arrived at the restaurant in Pszczyna – first as sous chef, then as chef, where I combined the cuisine filled with passion and fascination – it was a breakthrough moment for me. I managed to run the restaurant in such a way that after several years of hard work we received an award and the title of the Best Restaurant in Poland.
